February 8th: Make Homemade Pasta Sauce

I like to cook but work a lot so do not do it too much. I have resolved to spend less time at work and more time at home doing things like this, so today is a great step in the right direction.

Today, I make homemade pasta sauce! I am combing a few different recipes. One is pretty basically and then the other adds some veggies!

So the initial recipe calls for olive oil, garlic, tomatoes (fresh or canned but I opted for fresh!), oregano, crushed red pepper, salt, black pepper, and fresh basil. Here’s how things got started…



I decided to add fresh chopped zucchini, squash, and mushrooms! Yum!



And then simmer.


It is not saucy, saucy but it smells delicious!

So while it was simmering I just cooked some whole grain spaghetti noodles and some pre-made frozen garlic sticks.

And now I am ready to eat!

On a side note, Mia and I did a 25 minute walk this am. It is gorgeous here in Colorado!
