January 26th: Spend the Day Photographing Downtown

We got snow in Denver! I thought it would be a perfect day to go photograph downtown. I started just aimlessly driving around and got my first decent shot at Union Station.

After a while, everything started to look dirty and dreary and I didn’t feel like I was getting good shots so I decided to go explore some of Denver’s great parks. I hit Washington Park first.

It was a nice day. I love the snow and hitting all the different parks was a nice change of pace from staying around downtown all day, even though that was the goal.

January 1st: Here we go 2021! 365 Days of Photos

Starting a new year is always like starting a new journey. This is the 4th year I am attempting to do 365 new or fun things. I have a list compiled and will strive each day to check something off. I have yet to do a complete year but whenever I look back I am always grateful for the things I did force or push myself to do.

About 7 years ago I challenged myself to take a photograph everyday. I am challenging myself to that again this year. So my first check mark for the year on my 365 things is to start and push myself everyday to photograph.

January 10th: Try Vietnamese Coffee

Sometimes it is funny how things happen. Over a year ago I was updating my list of 365 things and was having a hard time thinking of new things. A good friend of mine, who is a fantastic chef in Denver, was sitting with me and recommended some new foods/drinks to try. One of her recommendations was try Vietnamese coffee and a traditional Bahn Mi Sandwich.

Yesterday I was out driving doe Postmates and I got a delivery for both items from a little place near my house called Vinh Xuong Bakery in Zepplin Station, which is a really cool shared market/workspace.

So today I revisited the place to get a Vietnamese coffee.

I am not a huge coffee drinker. But wow!

This coffee is delicious. It is very sweet. Very much like a treat. I might be addicted.

Next week I am going back to try a Bahn Mi Sandwich!

January 11th: Make Hot Chocolate from Scratch

I have gotten a little backed up on posting but it does not mean I have not been actively checking things off my list. I suppose one task I should add to the list is keep my blog up to date. So I suppose today I will aim to make that happen and back date my postings.

So Friday, January 11th seemed like the perfect day to make some homemade hot chocolate! We had six inches of snow in Denver! Although much of it did not stick because it was so warm out, it still felt like a great day for some cocoa!

I found this super simple recipe online: Best Hot Chocolate from Scratch and went for it!

Gathered ingredients:

Started by heating whole milk and sugar:

Melted down the chocolate in the microwave:

Mixed it in once the milk started to slightly simmer:

Added a touch of vanilla. And boom- Hot chocolate!

It was decadent. And so easy! Definitely a great thing to do on a cold, winter day!

January 7th: Take Amtrak to Glenwood Springs

This is such a great experience and another one that I actually crossed off last year but never input, so on another day when I am super busy with work I am crossing this off the list.

Anyone that lives in Denver, I highly recommend this. I went with a wedding party. It was a BLAST!

Here are some great pictures from the train! I would love to go again this winter or fall to see a different scene.

February 9th: See Live Jazz

This was actually a spur of the moment happening but a great night. I usually close the bar on Friday nights but I was just feeling absolutely drained tonight.

I asked the other bartender if they would close for me and when they agreed I told myself I would go right home and rest for the night.

I should have known enough that I would not do that.

A few friends showed up that I had not really seen in a while just as I was about to leave. They wanted to check out a show in the neighborhood. So we went down to check it out but sadly, it was sold out.

We had all heard of this little jazz club around the corner, Nocturne, and decided to check it out.

It was a really great time. A very chill setting, we had some great appetizers and a few great drinks. A place I would definitely visit again but a time that can not be duplicated!

February 2nd: Get a Denver Library Card

Well, this was super easy.

If you live in Denver and have ever wondered about getting a library card all you have to do is register online to get these benefits:

• Place holds on (request) materials in the online catalog

Download eBooks, Audio eBooks, Magazines and stream movies

• Stream and download local music from Volume Denver

• Search research databases

If you want a permanent card with more benefits you have to show a valid photo ID in a branch and you can get one with these additional benefits:

• Check out library materials – watch our video tutorial on using the self check out machines

• Request library materials from other library systems

• Use a Denver Public Library internet computer

January 16th: Have Dinner with a Group of Friends

I wish I could say this was a great experience. It definitely started out as a fun night. And was not even the thing I planned on marking off my list today but a group of friends I used to work with got together for dinner tonight. Only I got sick… I do not know if it is the flu or what but not enjoyable and I probably was not the best company. It was good to see the friends though. Might have to do this one again when I feel better!

August 26th: Eat at Vesta

So I came across this restaurant a couple years ago in downtown Denver called Vesta. I do not remember why but it really caught my eye and I have been meaning to try it ever since. 

Today is my birthday, so no better day than today. Holy goodness, it was so delicious!

Six friends came along. They had a 38 ounce ribeye that sounded just amazing! So three of us shared it. 


The idea of the restaurant is that it’s a “dipping” restaurant so most of the dishes come with lots of sauces and you dip everything. The steak was great. We also got dipping sauces with pita bread, a huge charcuterie plate and amazing dessert.

The best part though, my friends spending a great birthday with me and enjoying great food.

 

July 16th: Host a BBQ

What a fun thing to do! Hosting a BBQ is quite the endeavor but such a fun time.

Owning my own house has been such an adventure and has enabled me to do so many things. 

I decided to have a house party this weekend. My friend, Jared, bought me a grill as a housewarming gift, so no better time than to host a BBQ.

So many great friends turned out and we had a fabulous time. I think there will be many more of these to come at this house.

We had cornhole, a keg, some tired pups and a great group of friends!


Next time I will step it up and make some great BBQ!

July 9th: Go to a Comedy Show

I recently met a guy a work who is a a comedian and currently working on spreading the comedy scene around Denver. He wanted to know if we could put on a show in the venue… and we’ll, what a great idea!

We are doing it once a month, but today I had the great pleasure of hanging out for the comedians.

It was awesome. They were hilarious. 


I think it is going to be a great experience once a month and hopefully we can get more people to attend!
